Delivering Dinners

Does anyone out there have some ideas for great meals to take to people when they are sick or they just had a baby? Whenever I have to bring dinner to someone, I can't think of what I should bring. It should be something that is generally liked, transfers well, and not too difficult to make (Its already very likely I will mess up something easy to make, so its gotta be pretty simple for my kitchen skills.)
You will be superbly awesome in my book if you take the time to type out a recipe or give me a link to a recipe, but you will still be my hero if you just pass along some good ideas. Thanks (mostly from the recovering individuals that are subject to my cooking!)

We usually make a lasagna or enchiladas. Although I have seen it done where people coordinate to have one make a salad, one make an entree, and one bring a dessert.

You can never go wrong with a big pot of soup and some fresh bread. Soup is so easy to double so you have enough for your family too. I like Chicken Tortlla soup, or lentil soup, or the standard Chicken noodle soup.

My favorite thing to take is a stromboli - a hot sandwich.
http://www.recipezaar.com/Spiral-Stromboli-81027 I often substitute my own french bread recipe for the dough, it takes a little longer to bake that way, but yummier. It is universally liked and easy to transport. I throw together a salad and take a bag a chips to go with it. And cookies too! I also pack in foil pans/containers from the $ store so they don't have to wash or return dishes.

One of the best things we received after my husband died was homemade pizza. My friend used homemade bread dough for the crust and then put pizza toppings she already had on hand on top of the yummy crust. It was one of the few things that my kids would eat (Lemontree's enchilada's being the other). Too many people brought us heavy, fatty food and we're not used to eating that way so a lot of food went to waste. Simple is best :-)

I have made this the last 3 times I have had to deliver meals (I have a really yummy homemade bread stick recipe I serve with it if you want to go crazy!). All 3 families have requested the recipe after. And my kiddos LOVE it!

CHICKEN SPAGHETTI

2 lb boiled chicken or 3 chicken breasts, cooked and shredded
½ c. chopped celery
1 can tomato soup
1 can cream mushroom soup
½ lb grated cheddar cheese
½ can tomato juice or sauce
½ onion, chopped
1 clove garlic, minced or 1 tsp minced garlic
½ tsp chili powder
6 oz spaghetti
salt & pepper to taste
approx 1 qt chicken broth (saved from whole chicken if used)
1 lg disposable casserole dish

Cook chicken and shred. Cook spaghetti. Cook onion and celery in small amount of broth until tender. Add in all ingredients into large bowl, add in remaining broth as needed to keep moist, reserving enough cheese for topping, place in casserole dish. Top with cheese.

TO PREPARE
Heat oven to 350 and cook covered for 1 hour, or until cheese is melted and casserole is bubbling. Uncover and cook approx. 10 min. If cooked frozen cooking may take 20 min longer, while covered. Cooking time varies depending on how thawed dish is.

CROCK POT PIZZA

12 oz. wide egg noodles
1 1/2 lb. hamburger
1/4 cup chopped onion
1 jar (28 oz) spaghetti sauce
1 1/2 tsp. Italian seasoning
1 package (3 ½ oz) sliced pepperoni, halved
3 cups shredded mozzarella cheese
3 cups shredded cheddar cheese

Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and Italian seasoning. Drain noodles. In a 5 quart slow cooker coated with non stick cooking spray, spread 1/3 of the noodles and pepperoni. Sprinkle with 1/3 of the cheeses. Repeat layers twice. Cover and cook on low for 3-4 hours or until heated through and cheese is melted.
Yield: 6-8 servings.

I love homemade pizza, too! So easy, I'll send you my crust recipe later. It is totally easy and the best pizza dough recipe I have tried. Seriously!

I also love to give soup and whatever goes with the specific soup I am sending. One of my favorites is White Chicken chili and homemade tortilla strips.

Obviously this is really only good for fall and winter...although I also have a great fruit soup recipe that is AWESOME for the summer...okay awesome for anytime.
